Delicious vegetable korma recipe for vegans.

Ingredients Required 


  • 1 large onion (chopped)

  • 2 tbsp ginger-garlic (grated)

  • Diced vegetables (¼ cup beans, 1 medium carrot, 2 large potatoes, 1 cup cauliflower, half cup mushrooms, 1 cup peas)

  • ¼ tsp turmeric, 

  • ½ tsp Chili powder 

  • 2 tsp Coriander powder 

  • 1 tsp Cumin powder 

  • Salt to taste 

  • ½ cup fresh tomato puree 

  • 2 ½ cup water 

  • 2 tbsp ground cashews

  • ½ cup fresh cream 

  • ¼ tsp nutmeg powder

  • ½ tsp garam masala

  • 2 pinch of cardamom powder 


Cooking Method 


  1. Add some oil in a heated pan and throw in the grated ginger-garlic and onion. Stir it for the next 5-8 minutes on low heat until it turns golden brown.  

  2. Now toss in all the diced vegetables you’ve prepared and all the spices like turmeric, chili powder, coriander powder, cumin powder, salt and tomato puree. Mix vegetables with spices and stir-fry for 4-5 minutes on medium heat. 

  3. Then add water and let the vegetables cook on medium-low flame for 10-15 minutes by covering the lid. You may check if your vegetables are cooked by inserting a fork into a piece of potato. If the vegetables aren’t mushy on the inside, let them cook for 5 more minutes and remove the lid.

  4. Once the vegetables are cooked, add in the cashew paste and fresh cream and stir well. Make sure the vegetables aren’t too dry, add half a cup of boiled water to keep the consistency moderate.

  5. After a couple of minutes of sautéing, sprinkle nutmeg powder, garam masala, and cardamom powder with some leaves of fresh coriander. Stir it and serve in a bowl with some roasted whole cashews and a tbsp of cream.
