Ingredients

  • 4-5 Medium-sized boiled potatoes

  • ½ cup Boiled Garbanzo

  • 2 tbsp cornstarch

  • A handful of Chopped Cilantro

  • 2-3 Green chili

  • 1 tsp chopped ginger

  • ½ tsp paprika

  • ½ tsp cumin

  • ½ all-spice

  • Salt to taste

  • Oil for frying

Cooking Method

  1. Soak the garbanzo for 4-5 hours before you start cooking. Then strain it and let it cook on medium heat in a pan, covering the lid for 15 minutes. Make sure it is not overcooked and is chewy in texture.

  2. Mash the boiled potatoes or grate them to ensure there are no lumps and put in the cornstarch and salt to taste.

  3. Make a dough of the potatoes and cornstarch while mixing them well and set the mashed potato aside.

  4. In a pan, take half a tablespoon of oil and add the cumin, cut green chili, and ginger, and stir them for a minute.

  5. After that, add the strained garbanzo and sprinkle the salt, paprika, and allspice and mix it well.

  6. After stirring for 1-2 minutes on medium heat, turn off the flame and add the chopped cilantro. Your filling is ready.

  7. Now using the mashed potato and make 5-6 equal balls. If your potato mixture is wet to make balls, you can apply a little bit of oil to your palms and make a flat, round shape of it.

  8. Now take a spoonful of garbanzo filling and put it in the center of the prepared dough. Enclose the filling in the dough and give it a round shape making sure no ends are opened. Do likewise to make other Tikkis of potato mixture.

  9. Heat 4-5 tablespoons of oil in the pan and fry the round Tikkis on slow-medium heat until flaky and golden. Level it up using a scraper while frying.

  10. Transfer these fresh Tikkis into a serving plate or bowl. Add fresh curd, Indian tamarind sauce, mint sauce, and some spices on top, and sprinkle some cilantro for the garnish.
