Chicken Vindaloo – How to cook it the Indian way at home

Vindaloo is an Indian curry that has a hot, spicy, and tangy flavor in it. It can be made with chicken, vegetables, or any meat as the main ingredient and you will find it in almost every Indian restaurant that serves traditional food. It’s a finger-licking recipe that will leave a wonderful taste in your mouth. Like many other Indian curries, you can have it with steamed rice and Indian bread. This dish can be your savior when it comes to treating your guests on a dinner night or surprise your family on a relaxing Sunday evening. 


History 

“Vindaloo” comes from a Portuguese dish that is made with pork marinated in wine vinegar and garlic. It was in the mid 15th century when this dish was introduced in India by the Portuguese. After that, it was reinvented for the Indian taste using the local ingredients like black pepper, tamarind, whole spices, ginger, and garlic. Chilies play an essential role in the curry since it is hot and fiery. This is the reason why Indians like this spiciest chicken curry.


Ingredients 

You can make it with anything as the main ingredient like fish, vegetables, chicken, or any other meat. But today’s recipe is “Chicken Vindaloo” which uses chicken as the base ingredient. You may need other additives like - 


Chicken (500-600 gms)

Spices (whole and ground) - Cumin, black peppercorn, cinnamon, dried red chilies, cloves, dried coriander seeds, Kashmiri red chili powder, mustard seeds, turmeric, salt to taste. 

Vegetables - Tomato (4-5) puree, ginger-garlic paste (2 tsp), and onion (3-4 medium-sized chopped)

Recipe 


  1. Roast the whole spices in a pan and blend it in a grinder along with seedless tamarind to make a paste. 

  2. Pour oil into a heated pan and add chopped onion, and ginger-garlic paste into it to get a golden brown color.

  3. Add chicken pieces into the pan and fry for the next 4-5 minutes.

  4. Put in the ground mixture of spices with turmeric powder, salt, and vinegar into the chicken with tomato puree.

  5. Fry the chicken with all the spices for the next 10 minutes.

  6. Add the required amount of water to get a sufficient amount of curry after the chicken is cooked. 

  7. Cover the lid and let it cook for 30-40 minutes on medium heat.

  8. Serve hot “Chicken Vindaloo” with a bowl of steamed rice and bread.
